My cousin Mara made the most amazing guacamole for our family Easter party. I could not get enough of it. She shared her recipe with me and then Sam & I made it this week to take on our picnic at the zoo. It was a hit! It’s such an easy guacamole to make. And it was so delicious that Henry and I ate it (even though it was a bit brown) the next day for lunch. This recipe makes quite a bit of guacamole, so if you ever have one of those weekends with lots of parties to attend this would be a perfect dish to make!
Delicious & Easy Guacamole ::
3 ripe avocados (I ended up using 4)
1 can of diced tomatoes with chilies (drained)
1 red onion (diced)
1/2 tsp kosher salt
1/4 tsp. pepper
1 tsp. lemon juice
1. Peel avocados & cut into cubes
2. Mash avocados, onions & drained tomatoes together
3. Stir in salt, pepper & lemon juice
Sam LOVES to mash things!
