Brushcetta with Pesto & Tomatoes
Over the years I have collected quite a few recipes from some of the awesome cooks in my family.  My favorite recipes are those that are not only delicious but easy to make.  When it comes to parties I like to show up with food in hand to contribute to the meal.  My favorite thing to bring is appetizers, so whenever I find a tasty appetizer recipe I love to keep it in my recipe binder.  This recipe comes from my Aunt Kim, who, like me, often shows up to parties with an appetizer in hand, and whatever she makes always seems to disappear quickly!  She’s given me this Bruschetta with Pesto & Tomatoes recipe to share, so be sure to keep it in mind for your next party!

Aunt Kim’s Bruschetta with Pesto & Tomatoes:

(easy to make, delicious to eat — and it has a bit of a kick!)
Slice one baguette
Top each slice with:
a bit of Pesto (Here’s my  Homemade  Pesto Recipe)
a small spoonful of Rotel tomatoes
a sprinkle of an Italian Mix shredded cheese
Bake for 10 minutes at 375.  Serve warm.  Make plenty of these, because they go fast!
