Grilled Cheese with Chicken and Lemon BasilWe have had a ton of basil and lemon basil come our way recently, and I’ve been trying to find ways to use every single leaf of basil.  One of my favorite things to do lately is to dress up our grilled cheese sandwiches.  First we had Caprese Grilled Cheese, and then this week I experimented with grilled chicken and lemon basil to create a divine grilled cheese.   Not only was it delicious, but it was filling and I didn’t get mid-afternoon munchies.  Plus it was super easy to make, and you know I love a recipe that is easy to put together!

2 Slices of Bread (I like to use sourdough bread)

Mozzarella cheese (can be slices or shredded works too)

Italian blend of shredded cheeses (optional – I just have a bag from Trader Joe’s that I LOVE)

Grilled Chicken chopped up into small pieces

Fresh lemon basil, chopped up (I use my kitchen scissors to cut it up)

Butter
