Before I begin let me give you a word of warning:  Truffle Fries are highly addictive.  Once you’ve had them you’ll never go back to plain old french Truffle Friesfries!  Even my children are smitten with truffle fries now.

I have had the pleasure of dining on truffle fries on many fine restaurants in our area, and I fell in love with them.  And thus began the quest to figure out how to make them at home for my family.  It ended up being quite a simple process, and the end result was delicious.  That being said, the ingredients are rather on the expensive side, but truffle oil and truffle salt can go a long way as you only use a little bit of them to add the flavor.  I bought my truffle oil at the Flying Olive and the salt at Colonel De’s, both of which are located at the Friendly Market.  Add those two, and a just a few other ingredients to a batch of french fries and you have the perfect snack or side dish.  We had the fries as a side with steak but I think they’d go great with so many main dishes…chicken, fish, and the list goes on.  I used frozen fries when making our truffle fries, so I felt sort of like I was cheating, but they turned out perfectly and were probably healthier than deep frying them.  If you are looking for a new spin on french fries, give this recipe a whirl.  If you aren’t sure you will like them before purchasing truffle oil and salt you could taste them at a restaurant to see if they are your sort of thing.  I should also mention that the truffle oil could be used for other recipes, like mashed potatoes or mac and cheese.  Max had Truffle Mac and Cheese at BrewRiver GastroPub last night and he declared that I should make mac and cheese like that all the time.  So apparently everyone in my family is addicted to truffles now.

Truffle Fries ::

Ingredients:Steak Dinner

1 bag of frozen french fries

Truffle Oil (1-2 Tbs)

Truffle Salt (1/8 tsp.)

Kosher Salt (1 tsp)

Fresh Parsley, chopped (a few Tablespoons)

Shredded Parmesan (about 1/4 – 1/2 cup depending on how much you’d like)

Directions:

Step One:  Preheat oven according to directions for french fries.

Step Two: Sprinkle just a little bit of Truffle Oil on a cookie sheet and use a brush or paper towel to spread the oil evenly all over the pan.  Spread french fries on pan.

Step Three:  Cook french fries according to directions on package.  Each time I took the fries out to stir them I used a brush to dab a little more oil on top of them.  You don’t want the fries dripping in the oil, just dab it here and there and then stir them around.

Step Four:  Mix 1/8 teaspoon of Truffle Salt with 1 tsp. Kosher Salt (truffle salt is very strong, you don’t need a lot of it at all).

Step Five:  When the fries are finished cooking remove them from the oven and sprinkle salt & parsley over them and stir to make sure the fries are evenly coated with salt & parsley.

Step Six:  Put fries on an oven safe plate and sprinkle Parmesan on top.  Put the plate back in the oven for just a few minutes until the cheese starts to melt a bit.

Step Seven:  ENJOY!
