Asiago Garlic RisottoA few months back my cousin Joe married his sweetheart Andrea, and Prince Henry was their ring-bearer.  The rehearsal dinner was held at my Aunt and Uncle’s house and my Aunt made a five-star meal for us.  It was seriously one of the most delicious meals I’ve ever had.  She served a tenderloin and fresh scallops, beans, salad, and a delicious Garlic Asiago Risotto.

I have made this a few times and it is always enough to feed a crowd even when I half the recipe.  The flavors are amazing and it is a perfect side dish for steak and seafood or any dish for that matter.

Recipe:  Garlic Asiago Risotto 

(Feeds a crowd of at least 15)

9 1/3 cup chicken broth (1 1/2 large Chicken Broth Cans)

2 12-oz packages of Arborio Rice

A little over 1/2 cup of olive oil

A little over 1/2 cup of white wine (I have used Sauvignon Blanc and have used Chardonnay)

10 cloves of garlic, minced (I use half of a large jar of minced garlic found in the grocery store, which is about 15 tsp of minced garlic)

2 1/2 TSP dried onion flakes

2 1/2 TSP salt

1/2 or more TSP pepper

Mix all of the above in a slow cooker.  Cook on High for about 3 hours or until ready (most liquid is gone, all absorbed).

Stir in a 5 oz container of shredded Parmesan Cheese (about 1 2/3 cup) AND you may also add 2/3 cup Asiago Cheese shredded.

Cook uncovered until Parmesan Cheese is melted, about 15 more minutes.
