Truffle & Parmesan Pita Chips RecipePita chips are great for pairing with dips and hummus, and they are really easy to make at home.  For a long time we’ve been making Pita Chips for parties with a simple combination of pita bread, olive oil, salt and pepper.  And they are always devoured at parties.  Recently I decided to jazz things up with my beloved Truffle Oil and Truffle Salt.  I’m such a sucker for all things truffle lately.  These Truffle & Parmesan Pita Chips would be perfect for your next party, maybe paired with some hummus or a hot spinach and artichoke dip.  Yum!

Truffle & Parmesan Pita Chips Recipe:

Ingredients:

Pita Bread

Olive Oil

Truffle Oil (I found mine at the Flying Olive store)

Truffle Salt (found at Colonel De’s Herbs & Spices)

Kosher Salt

Pepper

Shredded Parmesan

Truffle Parmesan Pita ChipsDirections:

Preheat oven to 375°.  Mix a half teaspoon kosher salt with 1/4 teaspoon truffle salt (you don’t have to use all of this salt in the recipe, you can adjust according to your preference).  Cut up Pita Bread in triangles and place them in a single layer on a cookie sheet.   Brush both sides of bread with a very light layer of olive oil and then sprinkle with the salt mixture and pepper.  Put the pita bread into the oven and bake for 5 minutes.

After five minutes remove the chips from the oven, flip all of the pita bread over and brush a light coating of truffle oil over the bread and sprinkle just a bit more of the truffle/kosher salt mixture on the chips.   Place the bread back into the oven for 5 more minutes.  Remove the tray again and sprinkle with Parmesan cheese and bake for just a few more minutes until the cheese is melted.  Remove from oven and enjoy!  Best served fresh out of the oven.
