Easy Pesto Pasta SaladOften times when I need to bring a side dish to a party I turn to one of my favorite tried and true recipes, Pesto Pasta Salad.  It’s my go-to because I can make it in a jiffy and it’s delicious.  Sometimes I make this pasta salad just to have in the fridge as a side for dinner or for Ella to pack in her lunch.  She loves this pesto pasta salad!  Try it yourself and see what you think.  Some additions can be made…I’ve added chicken on occasion and pine nuts would be good too.  It only takes a few great ingredients to make this flavorful pasta dish!

Easy Pesto Pasta Salad

Ingredients:

1 box Pasta – any kind, our favorites are Bow Tie or Rotini

Pesto – 7 oz. container (or if  you make Homemade Pesto use 3/4 – 1 cup)

Cherry or Grape Tomatoes (1-2 cups, or however many you happen to have in your garden at the time)

6 oz. container Feta Cheese

a pinch of Salt

Directions:

1.  Cook pasta according to directions on box and drain.

2.  Stir Pesto and Pasta together in a big bowl and let sit for a few minutes so the pasta can cool.

3.  Add tomatoes, Feta and just a little bit of Kosher Salt.  Stir gently to mix.  Enjoy!
