Huevos RancherosWe have recently become obsessed with Huevos Rancheros for breakfast (and sometimes lunch) at our house.  We first tried Huevos Rancheros (Rancher’s Eggs) at the Green Dog Cafe and immediately fell in love.  We went home and made some ourselves the very next day.   While our Huevos Rancheros aren’t just like those at Green Dog, they are mighty tasty themselves!  If you have the ingredients on hand they are super easy to make and it’s a really filling meal.   We have tried to keep all of the ingredients in our fridge so we can make the Huevos Rancheros whenever the mood strikes.  We even went so far as to make some delicious Black Beans and Ranchero sauce to keep on hand.  Try this recipe at home and let me know what you think!

Huevos Rancheros

Ingredients:

Tortilla

Black Beans (use THIS RECIPE it’s the bomb!)

Ranchero Sauce

Fried Egg

Shredded Cheese

Directions:

  1.  Spread butter on both sides of the tortilla and toast it in a skillet over medium-high heat until golden brown.  Transfer to a plate
  2. Heat up beans and put a layer on top of tortilla.
  3. Drizzle ranchero sauce over the beans.
  4. Fry egg until done (to your liking) and gently place egg on top of beans/ranchero mixture.
  5. Sprinkle cheese on top of egg and beans.
  6. Eat and Enjoy!
