Chicken Broccoli Casserole
- Ingredients:
- 1 package boneless, skinless Chicken Breast
- 3 stalks Broccoli
- 2 cans Cream of Chicken soup
- 1 cup Mayo
- 1 tsp. Lemon Juice
- ½ cup shredded Cheddar for mix; ½ cup for topping
- 1 stick Margarine
- 1 sleeve Ritz crackers
- Instructions:
- Cook chicken breasts for 20 minutes at 400° (until done). Cut chicken into bite sized pieces.
- Cut broccoli into bite sized pieces and steam.
- In a big bowl combine soup, mayo, lemon juice, ½ cup cheddar & chicken ~ stir to mix.
- In a 9x13 casserole dish put broccoli on bottom then top with chicken mixture.
- Crush Ritz crackers, and melt the margarine. Mix the two together and spread over chicken mixture.
- Bake at 350° for 20 minutes, take out and sprinkle cheese on top. Bake until cheese melts (about 5 minutes). Enjoy!
