I want to share one of my favorite EASY appetizer recipes.  I found the recipe for Basil Pesto Rounds on Allrecipes.com, and made a couple minor modifications. This appetizer is always a hit at parties, and it makes a perfect little side with pasta dishes as well.  These appetizers combine my love of pesto, cheese and bread, and it doesn’t take very long at all to put these tasty treats together.

Basil Pesto Rounds

Ingredients

1 Baguette (sliced)
2/3 cup Mayo
1/2 cup Pesto (here’s a recipe for my homemade pesto)
2 Tbs. Minced Garlic
1/2 cup fresh shredded Parmesan Cheese

Instructions:

1. Mix together Mayo, Pesto, Garlic and Parmesan and set aside.

2.  Place slices of baguette on a cookie sheet and  broil for about 5 minutes, until toasty on one side.

3.   Turn bread slices over on cookie sheet.

4.  Lower oven temperature to 350 degrees.

5.  Spread Pesto mixture over the un-toasted sides of the bread slices.

6.  Bake at 350 for 6-8 minutes and then broil for just a few minutes until the mixture is bubbly and golden.
