Last week in our CSA from Rains & Sun Backyard Farm we got a bunch of okra. Since I’m on a healthy eating kick, I felt like pan fried okra wouldn’t be the best option. I did a little research, and came up with a great way to make the okra taste yummy like fried okra, but without all the <messy & unhealthy> frying. If you love okra, you should give this method a try. Using Jiff corn bread mix makes it a bit sweet, and all four of my kids ate it! Score one for Mama!
Side Note: I think okra is a pretty veggie…it looks like little flowers when you chop it up!
Oven Fried Okra
Ingredients:
Okra
Jiff Corn Muffin Mix
Water
Cooking Spray
Directions: Slice okra in 1/2 inch slices (discard ends). Dip slices in water and then coat with corn muffin mix. Place coated okra on a cookie sheet sprayed with Cooking Spray (I use Olive Oil spray). Bake at 400° until golden & crisp (20-30 minutes).
