For me, a grilled cheese is in my top ten list of comfort foods. But sometimes just cheese & bread won’t cut it, so I have to mix things up a bit. One of my favorite kinds of grilled cheese is a Caprese grilled cheese, made up of mozzarella, tomatoes and basil. It’s delicious. This is no ho-hum grilled cheese ~ it’s the best grilled cheese that summer has to offer! Grab yourself some fresh tomatoes and fresh basil and you have the perfect grilled cheese.
Caprese Grilled Cheese:
Ingredients:
2 Slices of Bread (I like to use sourdough bread)
Mozzarella cheese (can be slices or shredded works too)
A tomato, sliced thin
Fresh basil, chopped up (I use my kitchen scissors to cut it up)
Butter
Directions:
Spread butter lightly on one side of each piece of bread. Heat skillet over medium-high heat. Place bread (butter side down) on the skillet, top with cheese, tomatoes, basil, a bit more cheese, and then the second slice of bread (butter on the outside). Cook over medium high heat, until each side is golden brown…turning halfway through. Then enjoy!
