Seven Days of SaladI’ve been trying to make healthy changes for myself and for my family, and one thing I’ve decided to try is to have a salad each day, preferably at lunch because that’s the meal that I make the most bad decisions about.  It seems that I’m usually busy mid-day and end up eating fast food or making poor choices at home and snacking or just eating unhealthy stuff.  I thought that making a pledge to have a salad each day would motivate me to make better choices at lunch time.  Before you say it…I know that salads are not always a healthy choice, but it’s better than what I have been doing.  And I’m trying to be somewhat smart about my salad choices.  I’m not a huge fan of lots of dressing, so I cut a few calories by just drizzling a very little bit of dressing on my salads.  If I can make this happen every week it will make for great, tasty lunches.  Michael teased me that my salads never look the same.  That’s because I like to keep things mixed up so I don’t get bored with this quest.  Hopefully you will find some salad inspiration from these weekly salad posts to spice up your salad routine too!  And if you have recipe ideas or inspiration for me please leave a comment below!

{11.16.14}  Last week was another crazy busy week for us, and I failed in two respects.  I had way too many store or restaurant bought salads, which wasn’t great for the budget.  And, I neglected to have a salad yesterday because I was at a party all day.  I should have planned ahead and eaten a salad before the party, because it would have resulted in me eating less snacks at the party.  Oh well, six out of seven isn’t bad!

Monday: We had a bit of grilled salmon leftover from Sunday night’s dinner, so I made a scrumptious salad with spinach, romaine, goat cheese, wonton strips and Homemade Apple Cider Dressing and topped it with warm Salmon.  It was SO GOOD!

Tuesday: Michael was off work on Tuesday and we had a late breakfast, so I completely forgot to eat lunch, which is unusual.  I had a side salad that night for dinner at Arnold’s downtown before going to see “Once” at the Aronoff.  Read about the show in this post.  It was fantastic!  So was dinner at Arnold’s.  I ruined the healthiness of this salad by pairing it with a burger and stout brews.  It was a Mama’s night out treat!  Sorry for the terrible picture, it does not do this salad justice.  We were outside on the patio and the lighting was low.

Wednesday: Well, it appears that I am no longer able to take Henry to Kroger without him begging for lunch from the salad bar.  How can I deny him?

Thursday: I was doing a little gift shopping at Joseph Beth Booksellers in Crestview Hills last Thursday, and I joined their “Gives Back” program to help give to organizations in my community and as a thank you I received several great coupons, including one to their “Bronte Bistro Express”.  So I used the $5 off coupon to grab myself a salad for lunch, and it was quite tasty!

Friday:  Eating lunch at Findlay Market is one of my favorite things to do.  There’s so many great places where you can grab lunch.  Last Friday I grabbed a couscous salad with apples and bacon from Fresh Table.  It was a nice change from the leafy salads!

Saturday: I hosted a baby shower on Saturday, and as busy as I was I still made myself a simple salad for lunch using my favorite homemade dressing.  And then on Sunday I failed and didn’t have a salad.  Here’s hoping I can make it happen all seven days this week!
