I’m jumping back on the Menu Planning bandwagon after being absent for a while. I NEEEEEED Menu Planning to stay sane! It helps me to save money at the grocery store and to save my sanity at dinner time when I’m scrambling to figure out what to cook. I’ve recently starting substitute teaching, and while I’m not doing it very often, it’s been a big change for our family. I forgot what it is like to work all day and then have to pull everything together in the evenings….so here’s a little shout out to the working mamas! I need to get my act together!
Here’s last week’s menu plan, I hope it helps you to figure out your own menu plan this week. If you need more inspiration visit my Recipe Archives or OrgJunkie’s Menu Plan Monday posts. And please share your own menu plans or favorite easy recipes in the comments below!
Menu Plan Monday ~
Skillet Red Beans and Rice (technically last week – but we had the leftovers for lunch this week!)
Slow Cooker Chicken Tikka Masala
Tacos (much to Henry’s amusement we had them on a Tuesday)
Kielbasa, Onion, Peppers & Potato Hash ~ This was a hit with the entire family! Well…sort of. Ella did not like the meat, and Sam did not like the potatoes so they made a switch and all was right with the world. This recipe has officially made it into our “rotation” of favorite meals!
Homemade Pizza Night ~ Taco Pizza made with leftover taco meat!
Old St. Mary’s Fish Fry ~ We went downtown for the Bockfest Parade and had a chilly dinner outside at a beautiful old church in Over the Rhine. We enjoyed fried fish and Bock beer and watched an awesome parade.
Corn Chowder with Potatoes and Cheddar Biscuits
