Pizza night happens quite often around these parts. We all love homemade pizza and I love experimenting with toppings on pizza night. One of our favorite pies is the Thai Chicken Pizza because the flavors are just perfect. This reheats well the next day for lunch – or eat it cold, that is just how good it is!
Thai Chicken Pizza
Ingredients:
1 Chicken Breast
2 Tbs. Diced Red Onion (plus more for pizza topping)
Sesame Oil
2 Tbs. Peanut Oil (divided)
Pizza Crust
Mozzarella Cheese, shredded
Diced Bell Pepper
Minced Garlic
Olive Oil
Directions:
Sauté bite sized pieces of chicken and chopped onion in Sesame Oil over medium-high heat until done. Toss chicken with one Tablespoon peanut sauce and cook for two more minutes. Remove from heat.
For pizza, heat stone in the oven at 450° while you prepare the crust. Roll crust out to desired thickness. You can use store-bought crust or pizza dough.
Mix together 1 Tablespoon each of minced garlic, Olive oil and peanut sauce. Spread over pizza dough. Top with shredded mozzarella, diced onions and peppers and chicken.
Bake until crust is golden and cheese is melted, about 15-20 minutes, depending on your oven.
