I’m pleased as punch to share our menu from last week with you….as I said last Monday, I’ve been a total slacker in the kitchen this summer. But all that has changed! Last week we had healthy home-cooked meals almost every night! With the exception of Sunday night, when we went to our favorite neighborhood Mexican restaurant, Mi Tierra to celebrate Max’s 7th birthday. Lemon Basil Pasta Bake (I used lemon AND lime basil in this recipe instead of plain ol’ basil…try that!)
Slow Cooker Chicken Tikka Masala with sides from Trader Joe’s : Naan, Vegetable Pakora and Basmati Rice
Black Bean & Rice Burritos
Slow Cooker Philly Cheesesteak Sandwiches (served on wheat hoagie buns)
Basil Burgers (Michael used fresh basil instead of dried this time, and I think it made the burgers taste better…and they were pretty tasty to begin with!)
Spaghetti & Meatballs
***All of these meals were accompanied with fresh fruits & veggies, I love summer produce!
