Mexican Fiesta Macaroni & CheeseThis past weekend we went to a Fiesta themed baby shower for my cousin and I was asked to bring a side dish.  It was suggested that Mexican Fiesta Macaroni and Cheese would be a tasty addition to the Taco Bar the hostesses had planned for lunch.  I started with my favorite homemade Mac and Cheese recipe and tinkered until it was a perfect Mexican Fiesta Macaroni and Cheese side.   Peppers, chilies and chorizo really transformed traditional mac into Mexican Fiesta Mac!  And to top it all off, I was able to cook it in my trusty slow cooker to save space in the oven.  If you are looking to spice up your Mac and Cheese or bring some pizzazz to a party you should try this recipe!  When I made it I didn’t make it too spicy, because I wanted it to be a crowd pleaser, but you could easily add a few more jalapenos to liven things up in this dish.

Fiesta Macaroni and Cheese ::

Ingredients:

1 lb. Pasta of your choice

3 Tbs. Butter

Mexican Fiesta1.5 cups Shredded Cheddar Cheese

1.5 cups Shredded Monterey Jack Cheese

½ cup Sour Cream

½ can (small) sliced Jalapenos (or the whole can if you like the fire)

1 can Ro-tel Tomatoes & Chilies

1 can Cheddar Cheese Soup

1 package ground Chorizo Sausage, browned according to directions on package

1 cup Milk

1 tsp. Yellow Mustard

¼ tsp. Salt

¼ tsp. Pepper

Directions:

Cook pasta according to directions on package.  After draining pasta in colander put back into the pot it cooked in and add the butter, stirring until melted.  Combine the pasta and the remaining ingredients in a large baking dish, large bowl or your slow cooker, mixing well.  This pasta can be cooked in the oven at 350° for 30 minutes or it can be kept on low in a slow cooker for several hours (it’s usually ready after about 30 minutes, it just needs to heat through).
