This is one of my Mama’s recipes, that I have loved since I was a little girl. It’s quite easy to prepare, and you can even double the recipe and make an extra casserole to freeze for later. I often do that, because I love having meals on hand in the deep-freeze. It’s a yummy and hearty meal, and even my picky children enjoy it. I like to serve it with rice and fresh fruit on the side.

Chicken Broccoli Casserole
Ingredients:
Instructions:
1. Cook chicken breasts for 20 minutes at 400° (until done). Cut chicken into bite sized pieces.
3. In a big bowl combine soup, mayo, lemon juice, ½ cup cheddar & chicken ~ stir to mix.
4. In a 9×13 casserole dish put broccoli on bottom then top with chicken mixture.
5. Crush Ritz crackers, and melt the margarine. Mix the two together and spread over chicken mixture.
6. Bake at 350° for 20 minutes, take out and sprinkle cheese on top. Bake until cheese melts (about 5 minutes). Enjoy!

- 1 package boneless, skinless Chicken Breast
- 3 stalks Broccoli
- 2 cans Cream of Chicken soup
- 1 cup Mayo
- 1 tsp. Lemon Juice
- ½ cup shredded Cheddar for mix; ½ cup for topping
- 1 stick Margarine
- 1 sleeve Ritz crackers
