Summer seems to be Corn Season. Whether you boil it, grill it or fry it, corn is a popular side dish for summer meals, especially cookouts. My favorite way to prepare corn is to fry it. Some people call this style of corn “succotash” but I just call it fried corn. Fried corn is always a hit at our summer
Fried Corn ::
Ingredients:
4 or 5 Ears of Corn (cut the corn off of the cob)
2 Bell Peppers, chopped
½ Red Onion, diced
2 Tbs. Bacon Grease**
Salt & Pepper to taste
Directions: Heat the bacon grease in a skillet over medium-high heat. When it is hot add the chopped up veggies and corn. Stirring frequently cook for about 10-20 minutes, tasting often and adding salt and pepper as needed. We like a lot of salt and pepper! The cook-time depends on how firm or tender you want your veggies, so when they taste perfect to you then they are finished.
**I think Bacon Grease is the best to use, but if you don’t have any you could try butter or oil.
