Last week Sam & I made homemade pesto together. He’s a great help at cutting the basil leaves off of their stems. Here’s the recipe I came up with…I think it’s very tasty!
Homemade Pesto
3 cups packed fresh Basil leaves
3 Tbs. minced Garlic
3/4 cup grated Parmesan
1/2 cup Olive Oil
1/4 cup toasted Pine Nuts
1/4 tsp. Kosher Salt
1 squirt Lemon Juice
Blend until smooth in food processor.
Our favorite way to enjoyhomemade pesto is in this Chicken Pesto Stir Fry recipe. I’ve also taken to freezing batches of pesto so we can have some during the winter months.
