The first time I had Strawberry Bruschetta I fell in love with it. My Aunt Patti created this recipe and served it at my cousin’s Rehearsal Dinner. They were gobbled up at the party! It’s a perfect sweet and savory combination. Looking at this ingredients list you might wonder if it works…but trust me, it does. The flavors of the goat cheese, strawberries and balsamic vinegar combined are scrumptious. I used the last of my strawberries from our trip to the Red Barn Farm to make this appetizer for a family party recently, and it was very well received.

Strawberry Bruschetta
Baguette Sliced Thin
One Quart Strawberries chopped into small pieces
One container Goat Cheese
Olive Oil
Balsamic Vinegar
Directions:
Toast the baguette slices in the oven for a few minutes at 425° – keeping an eye on them so they don’t burn. Remove from the oven and spread about a tablespoon of Goat Cheese on each slice. Sprinkle on diced Strawberries (lightly pressing into the cheese). Then drizzle on Olive Oil and Balsamic Vinegar. Serve and enjoy!
