Truffle Mashed PotatoesEver since I picked up a bottle of White Truffle Oil at the Flying Olive shop and Truffle Salt at Colonel De’s at  Friendly Market last year I’ve been obsessed with finding new ways to use the oil to add a little pizzazz to our meals.  I started with Truffle Fries, and now we are dressing up our potatoes with truffle oil.  A little bit of truffle oil and Parmesan cheese takes our mashed potatoes potatoes from blah to tasty!   Have you tried cooking with Truffle Oil?  What’s your favorite recipe?

Truffle Mashed Potatoes ::

Truffle Mashed Potatoes IngredientsIngredients:

6 peeled baking Potatoes, cut into 1 inch pieces

1/4 teaspoon Truffle Salt mixed with 1 teaspoon Kosher Salt

Pepper to taste

Butter 1/2 – 1 stick (depending on your preference)

2 Tablespoons Truffle Oil

1/2 teaspoon Garlic Powder

1/2 cup shredded Parmesan Cheese

1/4 – 1/2 cup Milk (just enough to make the potatoes soft but not watery)

Directions:

Bring a large pot of water (with a bit of salt in it) to a boil.  Add the peeled and chopped potatoes to the boiling water and cook until desired softness is achieved, usually about 15-20 minutes.  You can check to see how “done” they are by sticking a fork in them.  After they are finished cooking drain in a colendar.  Then put the potatoes in a large bowl with the butter and mash until the butter is melted.  Next add the remaining ingredients and mash & stir until you reach the desired consistency.  Enjoy!
