Menu Plan Monday ~ Vacation Cooking ~ August 4
by The Little Things Mama on Aug 4, 2014 • 9:17 am 1 CommentLast week we visited South Carolina with my family and enjoyed a week playing on the beach. We had a nice relaxing week, and we ate like kings and queens all week! We made some of our favorite meals and tried some new dishes as well. Hopefully our vacation menu will give you some new ideas for cooking! And for even more menu planning inspiration visit my Recipe Archives or OrgJunkie’s Menu Plan Monday roundup!
Vacation Menu Plan ::
Surf n Turf: Steak, Tilapia & Shrimp Kabobs on the grill with sides of Red Beans & Rice and Herb Roasted Potatoes
Homemade Pizza Night (Sausage & Onion, Skyline Pizza Pie, Philly Cheesesteak — with the leftover steak from surf n turf, and MORE!) Homemade Pizza Recipes
Pot Roast Sliders from Six Sisters’ Stuff
Cincinnati Style Chili 3 Ways (Spaghetti + Chili + Cheese) ~ I made this Cincinnati Style Chili from scratch, but it’s a top secret family recipe handed down from Michael’s grandfather, so I can’t share this one.
Pasta with Pesto, Parmesan and Pine Nuts
Steak Nachos for lunch (with some more of the leftover steak….we went a bit overboard on our Surf n Turf night) – we chopped the steak up in small pieces and then sauteed it with bell pepper and onion in olive oil for a few minutes, and then sprinkled the mixture over a plate full of chips. Then added cheese and chopped banana peppers and baked at 350 for just a few minutes until the cheese was melted. Serve with chopped tomatoes and sour cream. YUM!
Dad’s Birthday Dinner: Crab Cakes, Shrimp & Scallops Linguine (Recipe coming soon!), Salad and Peach Cobbler hot out of the oven
And for our anniversary we snuck away from the crowd to have a delicious dinner for two at Quigley’s Pint & Plate near Litchfield Beach.
For the vacation we also took a fun snack mix for the kids to munch on in the car, Ella made some banana bread and I also made some Bourbon Slush. For breakfasts we froze Goetta to take with us, and also had bacon, pancakes, hash browns and Mini Egg Frittatas.
