Did you enjoy that long holiday weekend?  We had a very busy and fun-filled weekend, we went on bike rides, visited the Loveland Castle, had a family game night, spent time at the pool with friends, went to the Northside Parade, had a cookout with family to celebrate the 4th and visited cousins on their farm.  I don’t remember the last time we crammed so much fun into one weekend!  I didn’t do much cooking in the past week, but I’m still going to share our menu.  And I’d love to hear from you…what’s your favorite meal to take to the pool?  I need some easy dinner ideas that travel well or cook on a grill so we can enjoy more evenings at the pool without buying dinner.What's for Dinner

Menu Plan Monday ::

Spaghetti & Meatballs

Chipotle at the Pool

Pizza & Salad at the Pool (lots of pool nights!)

4th of July Cookout with Family (our contribution was Root Beer floats, easy peasy)

Dinner at Raines and Sun Backyard Farm (we brought fruit salad made by Ella and cookies)

Homemade Pizza ~ Our own “Supreme” style: bacon, pepperoni, onions, bell peppers and fresh chopped garlic

Breakfasts:  Mini Egg Frittatas (you are going to want to pin this recipe, it’s so tasty!) and Banana Bread made by Ella

Lunches:  We dined at The Works in Loveland after a bike ride this week, it’s a great place to grab a bite!
